Organic Banana Muffins With Raspberries!
This is a wonderful tasty recipe that will warm those cold mornings or any other time you want to enjoy them. Using good quality Organic ingredients is the secret to these scrumptious muffins.
Preparation Time: 30 minutes
Servings: 16 to 18
Ingredients:
2 1/2 Cups of all-purpose flour
1 cup of bran
1/3 cup of Organic Nonfat Dry Milk Powder
1/2 teaspoon of sea salt
1/2 teaspoon baking soda
2 teaspoons of baking powder
1/2 cup of Honey
3 large bananas
2 extra large Organic brown eggs (use whites only)
1 cup of Organic Orange Juice (no pulp)
2 tablespoons Organic unsalted/cultured butter (melted)
2 cups of Organic Raspberries (may use other berries if you prefer)
Instructions:
Preheat oven to 400 degrees F. Start with mashing the bananas with the egg whites in a large bowl until frothy. Add the melted butter, honey and orange juice. In another bowl, combine all the dry ingredients then add them to the banana mixture. Then fold the raspberries into the mixture and mix lightly until combined. Grease muffin cups and fill about 2/3rds full. Bake for 18-20 minutes.
Serving Suggestions:
While the muffins are still warm, you can schmear them with organic butter or cream cheese spread and enjoy! They are yummy!
