It is filled with vitamin and mineral nutrition, and has a richness of flavor that is creamy and satisfying. Irish people can make the simplest of foods taste great and Colcannon is one of those special dishes. So enjoy!

Serves about 4 people.

Ingredients are as follows:

1/2 head cabbage, tough outer leaves removed, thinly sliced
1 pound small red potatoes, scrubbed well and cut in half
1/2 cup thinly-sliced onion
1 tablespoon butter
1 cup milk
Salt and freshly-ground black pepper, to taste

First: Steam the potatoes in a steamer basket over boiling water until tender which is about 15 minutes. Place them in a large bowl and cover to keep warm.

Second: In a heavy skillet over medium heat, melt the butter and add onion, cooking about 2 minutes. Add cabbage and continue cooking about 5 minutes, until cabbage is beginning to brown, stirring frequently.

Third: Reduce heat to low. Add milk, salt, and pepper, stirring to combine. Cover skillet and cook about 8 minutes, until cabbage is tender.

Fourth: Add cabbage mixture to the potatoes in the bowl and mash with a potato masher.
